Sugar sources are from many plants. Certain plant can produce sugar directly like coconut, palm or sugar palm, sugar cane, palm juice and many others, but other kind plant can produce sugar just after process through fermentation like tuber and tuber crop. Covert some food source like tuber through fermentation need aid of some microorganism, nee certain fungi to convert this food into sugar.
Fungi can convert tuber into sugar need on the certain condition, so the condition should be tailored to the need of this microbe to live. The conditioning to live of this microbe like temperature, pH, concentration of nutrition and the number of microbe. If the conditions are not suitable with this limitation, then microbe will die.
People also can convert food that rich of carbohydrate into sugar by using enzyme, but this process need more high technology conditioning because the process don't run naturally and sometime the sugar product different with natural sugar. Many synthetic sugar are marketed and this sugar have different taste and have bad effect to human body. Synthetic sugar just use to produce cheap food or cheap candy. Even this product is not safe for human but synthetic sugar always sell to meed the need of poor people.
