Pepper - Indonesian Spices

Pepper as a kind of Indonesian fruit as Indonesian spices, always use as cooking ingredient in Indonesia. Indonesian food are always have special taste because they always use spices on their cooks. Every island in Indonesia use different of spices for their cooks, even in Aceh use Ganja leaf as food ingredient. Pepper include of Indonesian vegetables because more use as vegetable cooking than as other purposes. Pepper sometime also use as medicine and sometime mixed in herbal medicine often called as "Jamu".

There are two kind of pepper that is grow in Indonesia, white pepper and black pepper. White pepper is use more widely for many cooking in Indonesian and Asian food, but black pepper use more less use.

White pepper consists of the seed only, with the skin of the pepper removed. This is usually accomplished by process known as retting, where fully ripe peppers are soaked in water for about a week, during which the flesh of the pepper softens and decomposes.

Black pepper is produced from the still-green unripe berries of the pepper plant. The berries are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures cell walls in the pepper, speeding the work of browning enzymes during drying.
